Originally, I called this recipe Vegan Soul Hugger because the first time I ate it, I felt a blast from my past when Memaw use to make beef stew on cold days. The Gardein Beefless Tips work so well in this dish, too. You've got to give the recipe a try when you get a hankering for your Grandma's cooking.
HERE'S ALL IT TAKES
2 small onions, chopped
2 large celery stalks, chopped
10 white mushrooms, quartered
3 garlic cloves, minced
4 cups no-beef broth
1 teaspoon liquid smoke (pecan or hickory)
5 small Russet potatoes, peeled & cubed
5 small carrots, sliced 3/4 inch thick
2 packages Gardein Beefless Tips
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon ground dry mustard
1/4 teaspoon ground bay leaves
1/2 teaspoon each salt & pepper
