Here's a groovy plant-based olive snack for you. It's great for dipping or adding as a condiment to a hot sandwich.

Ingredients

  • 1/2 small roasted red bell pepper from the jar chopped
  • 1/2 cup green olives chopped
  • 1/2 cup black olives chopped
  • 1/4 cup fresh parsley chopped
  • 1 1/2 tablespoons red wine vinegar
  • 1 pinch salt

Instructions

  1. Toss the roasted bell pepper, olives, parsley and red wine vinegar in a small bowl. Season with a pinch of salt.
  2. Serve with your favorite crackers or snack breads.
