Walnut Smoothie with Cherries and Spinach

On the trail to eating whole food plant-based recipes, I'm discovering tastier ways to start my day.  The combination of this smoothie may sound weird, but I assure you, the flavor is OUTSTANDING!  All you can really taste is the bananas and cherries. Walnuts and spinach have such mild flavors that they're easily overpowered by sweet fruits.  If you have picky eaters, don't let them see you put this together.  Just serve it up and let them try to figure out what's in their glass.


serves 4

  • 1 cup walnuts
  • 2 cups firmly pack baby spinach
  • 3 small cold, ripe bananas
  • 1 1/2 cups frozen cherries
  • 2 cups non-dairy milk (soy, almond, coconut, etc.)

Blend on high in a drink blender for about 20 seconds, long enough for the walnuts and spinach to blend down into non-existence.  This will keep all day in the fridge.  The color will darken slightly because of the bananas, but it will still taste wonderful.


For frozen treat on a hot summer day, pour smoothie mix into small plastic cups, cover securely with a square piece of foil, poke a food-grade popsicle stick through the middle of the foil, then transfer cups to the freezer.  Allow 2 to 3 hours for smoothies to become solid.  Recycle the foil squares and plastic cups for the next batch of smoothie pops.
