Fruit and nut smoothies are my go to breakfast every morning. Not overly sweet, highly nutritious and the kids love them.
HERE'S ALL IT TAKES
- 1 cup walnuts
- 1 heaping handful baby spinach
- 1 cup frozen blueberries
- 1 large ripe banana
- 1 1/2 cups non-dairy milk (soy, almond, coconut, etc.)
Blend on high in a drink blender for a minimum of 20 seconds, long enough for the walnuts and spinach to blend down into non-existence. This will keep all day in the fridge. The color will darken, but it will still taste delicious.
