Carrot and Orange Salad


Serve 4 friends

  • 1 pound carrots
  • 2 large oranges
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • pinch of sugar (optional)
  • 2 tablespoons chopped pistachio nuts
  • salt and ground black pepper

Peel the carrots and grate them into a large bowl.  Peel the oranges with a sharp knife and cut into segments, catching the juice in a small bowl.

Blend together the olive oil, lemon juice and orange juice.  Season with a little salt and pepper to taste, and sugar if you like.  Toss the orange segments together with the carrots and pour the dressing over.  Sprinkle the salad with the nuts before serving or not.
