Spinach Hummus is absolutely AWESOME as a lunchmeat substitute in wraps and toasted sandwiches. It's also great in tostados, quesadillas and burritos. Of course, when you think about it, burritos are just Mexican wraps. Anyhoo. There's nothing to whipping up a batch of this addictive chickpea recipe. Watch the video and see for yourself.
HERE'S ALL IT TAKES
- 2 to 2 1/2 cup cooked chickpeas or garbanzo beans, drained and rinsed
- 3 to 5 heaping tablespoons Tahini
- 1 heaping cup fresh baby spinach
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 to 4 tablespoon water
- juice from 1 large lemon
Blend until smooth in a food processor.
