Spinach Hummus is not just for dipping. I dig spreading between to toasted whole wheat tortillas with fresh bean sprouts and carrot. OH! I didn't think of it until just now - red bell pepper would make these rock! I wish I had thought of it when I put these together. It's okay. I have plenty of spinach hummus to have these again.
HERE'S ALL IT TAKES
- 4 whole wheat flour tortillas
- spinach hummus, warmed
- 1 small carrot, julienned
- 1/2 red bell pepper, thinly sliced
- 1 cup fresh bean sprouts
- 1/4 cup yellow or green onion, thinly sliced
Heat a griddle over medium heat until hot. Toast tortillas until crispy. Spread hummus on all four tortillas. Divide carrot, red bell pepper, sprouts, and onion evenly among two tortillas. Top each with the hummus-only tortilla. Remove from heat. Cut into quarters and serve.
