My family has been running on baby potatoes lately. They're so fun to eat and delicious eating hot or cold, for breakfast and for snack time. I've turned them into travel treats for us when we're spending most of our day away from home.
If you have a pressure cooker of any kind, get yourself a 2-pound bag of baby potatoes, pressure cook them on high pressure for 10 minutes. Allow the cooker's pressure to go down on its own then transfer those potatoes to plastic baggie. Toss with salt or your favorite salt-free spice blend then store them in the fridge until your next snack attack. You will be hooked instantly.
