Curried Cauliflower: Vegan Instant Pot Recipe

Found this recipe in the Everything Vegan Slow Cooker Cookbook. It has plenty of potential to be enjoyed by the family; it just needs some tweaking.


Serves 4-6

1/2 head small cauliflower
5 red potatoes
1 cup diced tomatoes
1/4 cup finely diced onion
1 cup water

1 teaspoon salt
1 teaspoon chili powder (feel free to go stronger)
1/2 teaspoon coriander (feel free to go stronger)
1/2 teaspoon cumin (feel free to go stronger)
1 1/2 teaspoon curry powder (feel free to go stronger)
