Instant Pot Tempah Potato Wraps

Here's another Jillicious recipe for all my Instant Pot Peeps. You could make it for a brunch or make it for dinner. Works both ways.

1 small yellow onion, chopped
1 small green bell pepper, chopped
1 (13 oz.) package tempeh, cut into cubes
2 large potatoes, peeled, cut bite size
1 (14 oz.) can petite diced tomatoes with liquid
2 tablespoons tamari
1 teaspoon Hickory liquid smoke
2 tablespoon apple cider vinegar
1 tablespoon brown sugar
1/2 teaspoon ground black pepper

Enough to feed 6 hungry folks
