Jill's Instant Pot Mac N Cheesy Beans dish is this week's Family Favorite Meal. It hits on the dopamine receptors like a proper comfort meal should. I used two Instant Pots and a Vitamix blender to bring it together.

FULL RECIPE to serve 4
Cook Pasta in iPot #1:
2 cups whole wheat macaroni pasta
6 cups water
[MANUAL] mode, 3 minutes cook time, 5-minute NPR. Drain. Set aside.
Vegan Cheese sauce In the Vitamix blender:
1/4 cup fresh yellow onion
1/2 cup rolled oats
1/2 cup natural cashews
1/4 cup nutritional yeast
1/4 cup roasted red bell pepper
2 tablespoons cornstarch
2 teaspoons lemon juice
4 drops liquid smoke
1 1/2 teaspoon salt
2 cups water
Blend on high speed for 5 minutes.
Cook vegetables in iPot#2
Using [SAUTE] mode, water sauté until semi-tender:
1 small yellow onion, chopped
1/2 poblano pepper, chopped
1/2 - 1 cup bell pepper, chopped
1 cup fresh tomato
2 teaspoons New Mexico Chili powder
2 teaspoons Mexican Oregano
1 1/2 teaspoon ground cumin
2 cups cooked black beans, drained
Mix drained, cooked pasta, cheese sauce and cooked vegetables together. Serve hot with jalapeno slices on top.
