Memaws Soy Curls Pot Pie

I did it! I managed to convert my Memaw's conventionally bake chicken pot pie recipe into a vegan Instant Pot and Breville Smart Oven pot pie recipe.
Yes, I am A W E S O M E.

(MeMaw’s Soy Curls Pot Pie serves 3 who will want seconds.)

Pie Crust (one top crust)
1 cup whole wheat pastry flour
1/3 cup vegan margarine
1/2 tsp salt
2-3 tablespoons cold water

Veggie Filling
1 cup dry soy curls
1 cup no-chicken base broth (to rehydrate soy curls)
1 celery stalk
3 carrots
3 medium potatoes
1 small yellow onion
1 cup frozen green peas
1 teaspoon poultry seasoning
1/2 teaspoon salt

Pot Pie Gravy
Any remaining liquid from pressure cooking veggies
1 1/2 cup unsweetened plain soy milk
3 tablespoons ww pastry flour
Season with salt and pepper to taste
