Merry Berry Breakfast Bars

Get your vegan baking mojo on with these incredible Merry Berry Breakfast Bars. Crunchy on the outside, thick pudding berry filling on the inside. Just try and eat only one. You can't do it.


2 cups mixed berries, fresh or frozen
2 tablespoons granulated sugar of your choice
2 tablespoons water
1 tablespoon lemon juice

3/4 teaspoon cinnamon
1 cup whole wheat pastry flour or your favorite
1 cup quick-cooking oats
2/3 cup firmly packed brown sugar
1/4 cup ground flaxseed
1/8 teaspoon baking soda
1/2 cup nondairy margarine, melted

Preheat oven to 350ºF (180ºC). Makes 12 bars.
