This recipe video wouldn't exist without my Facebook friend and fan, Candy G. She told me this recipe was her favorite cheese sauce recipe and when I read it, I didn't believe it could possibly be good.
"She's obviously been plant-based so long she has forgotten what real cheese like." I thought to myself.
I timed testing this recipe with Maggie's afternoon hang out session with her vegan theater friends. I wanted someone, other than myself, to be the guinea pig to the strange recipe.
Really Cheesy Fat-Free Vegan Cheese Dip
Makes about 2 1/2 cups
1/2 cup rolled oats
1/4 cup nutritional yeast
2 tablespoons cornstarch
2 tablespoons lemon juice
1 1/2 teaspoons salt
1/4 cup roasted red bell pepper
1/4 cup yellow onion
2 cups water
Place all ingredients in a blender and process several
minutes until very smooth and well blended. Pour into a saucepan, cook and stir until thickened.
