Spinach Potato Taco Filling from the Instant Pot

Another Instant Pot Video "WOO WOO!" This recipe comes from the Forks Over Knives mobile app. Del Sroufe came up with it but I had to modify with the ingredients I had on hand. Still turned out good enough to please the menfolk in house.


Spinach-Potato Taco Filling from the Instant Pot
Makes about 6 cups filling

2 large yukon gold potatoes, cut into small dice1 (8-ounce) package frozen spinach
1 medium onion, diced
1/2 cup diced chipotles tomatoes, plus 1/2 cup tomato juice from can
2 teaspoons garlic granules
2 teaspoons ground cumin

1/2 cup unsweetened, unflavored plant milk
3 tablespoons nutritional yeast
Sea salt and freshly ground black pepper
12 corn tortillas
1?2 cup chopped fresh cilantro
