Tomato & Black Eyed Pea Salad

You have got to make Tomato & Black Eyed Pea Salad today. I'll bet you have all the ingredients in your pantry and fridge already. It makes a beautiful meal and it's truly filling, even for active handsome men like my husband. He asked for this to go into our weekly rotation. What does that say to you?


1 large garlic clove, minced
4 tablespoons lemon juice
1 tablespoon tamari
1/4 teaspoon spicy brown mustard
1/4 teaspoon maple syrup

2 cups cooked black eyed peas, rinsed & drained
2 cups cooked brown rice
2 green onions, sliced1 large tomato, chopped
1 red bell pepper, diced
1 celery stalk, diced
3 tablespoons fresh parsley, finely chopped

Mix dressing ingredients. Set aside.

Toss salad ingredients together. Pour dressing over salad; toss well. Eat right away or chill and eat later. Serve on a bed of your favorite dark leafy greens.
