Vegan Beef Stew from the Instant Pot

The first time I made this stew, I felt the same blast to my past as Anton Ego, in Ratatouille, experienced when he bit into the ratatouille. I was transcended to my Memaw's kitchen where she used a stove-top pressure cooker to cook her beef stew on cold days.

The Gardein Beefless Tips work so well in this dish, too. You've got to give the recipe a try when you get a hankering for your Grandma's cooking.


2 small onions, chopped
2 large celery stalks, chopped
10 white mushrooms, quartered
3 garlic cloves, minced
5 small Russet potatoes, peeled & cubed
5 small carrots, sliced 3/4 inch thick
2 packages Gardein Beefless Tips
4 cups vegetable broth
2 teaspoons liquid smoke
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon ground dry mustard
1/4 teaspoon ground bay leaves
1/2 teaspoon each salt & pepper


Directions for Instant Pot Owners
Press [Saute] to heat up inner pot, then add mushrooms, celery, and onion with enough broth to cover the bottom of the pan. Sauté the vegetables until the onions become translucent. If the inner pot becomes dry before the onion is tender, add a few tablespoons of broth. Add minced garlic, cook one minute.

Add potatoes, carrots, beefless tips, liquid smoke, oregano, thyme, mustard, ground bay leaf, salt, and pepper.  Add remaining broth and stir to distribute spices evenly.  Cover with lid then turn lid clockwise to lock into place.  Align the pointed end of the steam release handle to point to “Sealing” to prevent losing any liquid.

Press [Slow Cook], use [-] button to adjust cooking time to 3 hours.

For vegan beef stew in a flash, press [Manual], use [-] button to adjust pressure cooking time to *3 minutes. Use  either the quick-release or natural release method to release the pressure.

Note: Depending on the size of the potato chunks, 3 minutes of pressure cooking is the minimal cooking time. Going an extra minute can make a difference in cooking big potato chunks fork tender. Take advantage of the extra cooking that takes place while using the natural release method to reduce the pressure in the pot.
