I know what you're thinking, "A recipe this simple can't be all that great." I thought the same thing. I figured I'd have to jazz it up; however, I didn't go beyond the original ingredients. I did goof up and threw in the ground cumin too early, but that didn't hurt anything.
HERE'S ALL IT TAKES
6 cups water makes 6 servings
2 1/2 cups dried red lentils
1 large onion, chopped
1 teaspoon turmeric
1/4 teaspoon chipotle chili powder
2 to 4 teaspoon lemon juice
1 teaspoon ground cumin
salt and pepper to taste
Stir water, lentils, onion, turmeric, and chili powder into electric pressure cooker pot. Lock on lid.
Pressure cook with high pressure for 15 minutes. Allow pressure to go down on its own, before removing lid.
Stir lentils then add lemon juice, ground cumin. Season with salt and pepper to your liking.
