Brazilian Garlic-Lime Chicken
This recipe is about the marinade I soaked the chicken boobs in. That colorful vegetable medley on the side is Sweet & Zesty Fiesta Salad. It works as an addictive dip or a beautiful side to the chicken. I've also eaten it all by itself for a light lunch. It's very versatile. As for the marinade, the perky lime juice mingles with the fresh onion and spicy garlic. The parsley and rosemary add color and a fresh taste of bright green to the chicken. All together, they make an incredibly flavorful chicken that only needs a hot grill to finish it ...
Sweet & Zesty Fiesta Salad
My beautiful friend, Cheryl, brought this incredibly addictive salad slash dip to our party the other night. She carried it in a BIG ol'bowl. I thought she might have gone overboard and made too much. It turned out, she knew exactly how much to make. We couldn't get enough of this tangy sweet collage of goodness. We walked past it dipping our chips all night long. And when it was time to eat our grilled fajitas, we went back to the bowl to make it a condiment. I was lucky there was just enough leftover that I could photograph it ...
Hominy Among Friends
NOBODY, and I mean, NOBODY! has made hominy taste this AWESOME! Hot or cold, this arrangement of hominy, green chilies, cilantro and tomatoes with chipotle peppers is very hard to stop eating. I read through so MANY hominy recipes that all seemed to be lacking in color and bright flavors. So, I went off on my own and put what I wanted to taste around the hominy AND I won my husband over to hominy! WOOHOO! If you have the time, make this ahead, such as that morning or the day before serving. By day three, it's awesome cold! I totally see ...
Creamy Fettucini with Sundried Tomato Turkey
This is our new family favorite recipe! Creamier than the Creamy Fettucini with Ham that I made last week. The flavor of the sun-dried tomatoes coming from the turkey makes it VERY HARD to stop eating. Maybe I shouldn't post this recipe? With all the hub-bub of watching our waistlines and all, if you make this creamy carb creation, you're thoughts of dieting for the new year are OVER! Bwa Ha Ha Ha Ha!!! That was my villainous food blogger's laugh. What? Get on with the grub? Ok. HERE'S ALL IT TAKES 1/3 cup uncooked bacon, chopped 1/4 cup finely chopped onion 12 ounce slice, 1/2 inch ...
Apple Pear and Cranberry Crisp
This is a very good dessert to throw together, especially with apples and pears being on sale right now. The recipe makes a big batch, but once you've shared it with your babysitter and your friends, it only lasts about 36 hours in the frig. Sigh. Oh the memories. I pretty much followed Ina Garten's Pear, Apple and Cranberry Crisp recipe. Naturally, I was missing an ingredient or two, so improvised. Nobody noticed. HERE'S ALL IT TAKES 5 Gala apples 4 Bosc pears 3/4 cup dried cranberries 1/2 cup golden raisins 1 teaspoon grated lemon zest 2 tablespoon lemon juice 2 tablespoons orange juice (I used what we drink) 1/2 cup ...

Creamy, CHEESY Broccoli Rice Recipe
This cheesy broccoli and rice recipe was a BIG HIT with the family. It made a perfect side to a batch of crispy, chicken. It, also, made a filling vegetarian lunch the next day. I thought it was even better the next day. Broccoli rice recipes I've tried in the past left me with overcooked broccoli and dried out rice. I like my broccoli to have... [Read more of this review]

Quick and Easy Meatloaf Muffins
These easy meatloaf muffins took less time to bake in the oven than the traditional method of baking in a loaf pan or cast iron skillet. I had a kitchen assistant to help me bring this meal together. You may notice a sweet 5 year old in the background. Maggie was very serious and actually, very helpful. She surprised me with all that she could... [Read more of this review]

There's a new way to cook vegetables ahead of time without having mushy vegetables for dinner. Okay, it's not really new, but it's new for me and maybe, for you. I must confess. When it's my turn to watch TV, I usually watch the Barefoot Contessa. With TiVo, I can get in two or three episodes every couple of days. This is my idea of free culinary...
