Simple and Hearty Tuna Wraps

I forget how delicious, healthy and filling tuna salad can be for us.  I skipped toasting whole wheat bread slices this time and filled a few large spinach leaves instead.  YUMMO!  I was completely satisfied.

"Now I'm strong to the finish, cuz I eats my spinach.
I'm Popeye the sailor man!
TOOT TOOT!"

I don't know where that came from? Let's move on.

HERE'S MY FAVORITE COMBINATION

  • 1 (12 ounce) can light tuna
  • 1/4 cup chopped celery
  • 1/4 cup chopped broccoli
  • 1/4 cup golden raisins
  • 1/2 cup chopped apple
  • 1 tablespoon fresh lemon juice
  • 1/2 cup mayonnaise
  • salt & pepper to taste
  • fresh spinach leaves, rinsed clean

Drain tuna well.  Mix all ingredients in a medium size bowl.  Spoon enough tuna to fill a spinach leaf.

You're ready to chow down!

I grabbed an extra handful of spinach leaves and put them on the side, like chips and enjoyed the extra dark leafy goodness they offered.  I don't think anyone has ever gone wrong eating extra spinach.

    I just fixed this today. My hubby came home for lunch and LOVED it!!! I added some finely chopped green onion and sprinkled dill weed once presented on the platter. I did substitute canned chicken breast for the tuna as I need the tuna for a dinner recipe :0) But, it was just fabulous!!! Thank you so very much for sharing this.

    Oh yeah, and I steamed the broccoli for about 6 mins to soften/green it up some.

    Let me get this straight. You put together,

    * 1 can of cooked white chicken
    * finely chopped green onion
    * 1/4 cup chopped celery
    * 1/4 cup chopped broccoli, steamed
    * 1/4 cup golden raisins
    * 1/2 cup chopped apple
    * 1 tablespoon fresh lemon juice
    * 1/2 cup mayonnaise
    * salt & pepper to taste

    All mixed together, then filled the
    * fresh spinach leaves, rinsed clean
    * topped with chopped dill weed

    Is that right?

    I haven’t bought albacore tuna in awhile, and now I remember why. It’s very high in mercury. The latest Consumer Reports has a whole article on what types of fish and seafood are safest. Light tuna has less mercury than white or albacore, but it’s probably better to substitute wild-caught salmon for most if not all tuna recipes.

  • Thank you, Stephanie, for the health tip. I found a 2004 FDA report that confirms that light tuna is better than albacore or solid white canned tuna.

    I found it interesting that they mentioned not eating fish that eat other fish,as they have the highest levels of mercury. Such fish mentioned were Shark, Swordfish, King Mackerel, or Tilefish.

    We made this using leftover baked chicken for the tuna, cranberries for the raisins and 1/2 the mayo (weight watchers), and the fresh broccoli from the dairy. Oh my goodness, is this a good recipe I love your recipes they never fail me!

        Hi, Jill, I made just one batch which was a perfect amount for about 15 of us that participated. This Tuna Salad was the only item that was completely gone! When I shared the recipe link with others, I had someone ask me if I doubled the recipe. They were surprised by the nice amount the recipe made. Another coworker commented that this recipe was her favorite of the bunch today…Mine, too! YUM!
